Mmmmmm Rice Pudding


GREAT FOR PRE WORKOUT with an hour to settle in your stomach!

Since I do cardio at 11 am and weights at noon I need some healthy carbs - I never eat rice.... it’s just not my favourite food - that and potatoes (I like greens way more than whites!) ....until you add milk and cinnamon and a sweet extra - THEN it’s wow for any time of the day!

RICE PUDDING

2 and half cups milk non fat or whatever you like!

1/2 cup Arborio rice uncooked...

Another 1 cup milk non fat or what you like 1TBSP powdered cinnamon

1 tsp orange or lemon zest grated....

1/2 tsp or 1 tsp best of vanilla

4Tbsps sugar

Bring the 2 and half cups rice to boil on high - then reduce and low boil another 5 minutes... Then stir in the other cup of milk, cinnamon zest and sugar! Return to higher boil and boil for 5 minutes or until creamy and soupy.... add the vanilla in and stir. Take it all off the heat and let sit for 45 mins. Should be ready to eat. Add raisins or not - add maple syrup if not sweet enough for you.... or toss some berries on top! ENJOY!
