Delicious meatballs.... moist and tasty.... Oven 400 F . Cook for 30 to 35 minutes
In first bowl mix 1/2 cup plain kefir or milk with 1/2 cup finely chopped GF bread (two slices)Allow to soak......
Beat one egg....let sit alone....
In another Bowl....Mix with hands...
1 Tbsp fresh or dry Parsley
Half cup grated Parmesan
Half an onion diced
1 Tbsp crushed garlic
1 Tbsp wet basil or dry
Salt and pepper
1 lb. ground beef
Add the milk mix and egg together then add to beef mix. Mix well with hands and form into tbsp size balls - the balls shrink as they cook..... Remove balls as soon as they are removed from the oven. I cool them on wax paper.
Lovely with a simple tomato sauce with black olives and Italian spice.
