Thai Style Mango Salad recipe

This recipe comes from Judy Kingston at Serendipity Winery on the Naramata Bench in the Okanagan.

It’s best paired with a Serendipity 2019 Pinot Grigio (if you were interested)

Thai Style Mango Salad

Salad

1 lg. papaya, sliced

1 lg. mango sliced

1-2 red peppers sliced into strips

2 carrots, peeled, and sliced into strips

Arugula

Bean sprouts

Parsley

Green onions, sliced

Roasted cashews

Sesame/Chia seeds

Sauce

Ginger, finely chopped

Garlic, crushed

2 handfuls of peanuts (optional)

2 tbsp soya sauce

1 lime, juiced

1-2 tbsp honey or maple syrup

Salt and Pepper

Spices to taste – think chili flakes, celery seed, cumin

Directions

1/ Blend together all the sauce ingredients

2/ Mix together all of the salad ingredients in a bowl

3/ Add the sauce to the salad, top with sesame/chia seeds.
